Over the past decade, the city has developed a baking culture that attracts attention from around the world, with bakers drawing inspiration from the Noma kitchen, Japanese precision and French baking traditions, fusing them into something uniquely Copenhagen. Here you will find sourdough bread with character and a crust you can hear, cardamom buns that have become international icons, and pastries that change with the seasons and never look the same two weeks in a row. Juno the Bakery
Juno opened in 2017 in Østerbro and has since become one of Copenhagen's most iconic bakeries. Family-run and independent, with a clear focus: craft, quality and the small moments that become memories. The cardamom buns are legendary, the croissants are made with carefully selected ingredients, and everything is baked fresh several times a day. Wednesday to Sunday from 7:30.
Andersen Bakery
Andersen Bakery is a Japanese-Danish bakery on Islands Brygge that blends Danish baking tradition with Japanese precision and aesthetics. The bread is sourdough-based, the pastries are technically impressive, and the selection rotates regularly with the seasons. The bakery also makes the iconic potato buns for Gasoline Grill. Two locations — Islands Brygge (open 6:30–19:00) and Ørestad (open 7:00–18:00).


Andersen & Maillard
Andersen & Maillard is the roastery and bakery that put Nørrebro on the international specialty coffee map. Three locations across the city share the same philosophy: serious coffee, carefully made pastries and a space you are in no hurry to leave. The croissants are caramelised and layered, the bread is characterful sourdough, and the beans are roasted in-house. One of the city's best addresses for the morning.
Kani Bakery
Kani is the neighbourhood bakery in Frederiksberg built around sourdough, seasonal flavours and a belief that simple things done really well are enough. Everything is baked in-house with local ingredients, and the menu changes throughout the year — lighter creams in spring, deeper and richer flavours in winter. Bread scraps become granola, croissant offcuts become new pastries. Tuesday to Sunday from 7:30.


Rondo Bakery
Rondo sits on a quiet side street off Nørrebrogade and was created by the team behind the wine bar Gaarden & Gaden. All products are organic, and the focus is sourdough — crispy croissants, flavourful loaves and creative, seasonally rotating snacks. The bakery has been featured in the Washington Post, BBC and Vogue, but has kept its soul as a genuine neighbourhood spot. Come early — they bake in limited quantities. Mon–Fri 7:30–17:00, Sat–Sun 8:00–16:00.
Lille Bakery
Lille Bakery sits on Refshaleøen and is one of Copenhagen's most photographed spaces — and not without reason. The bright, open room with views into the production area is beautiful in itself, and the baked goods live up to the pictures. The focus is sourdough, seasonality and farm-to-table sourcing — flour from local mills, ingredients from trusted producers. On Fridays, dinner is served. Wed–Sun from 8:00.


Rug Bakery
Rug is the Danish word for rye, and that is the starting point for this bakery inside Villa Copenhagen near Tivoli. During the day, breakfast, brunch and lunch are served with a focus on sourdough bread, crisp pastries and specialty coffee. From 17:30, the mood shifts — pizzas, wines, cocktails and music take over. One of the few places in the city that works from breakfast to midnight. Open daily 7:00–23:00.
Hart Bageri
Hart Bageri opened in 2019 in collaboration with Noma and has since grown to four locations across Copenhagen. Sourdough bread is the foundation — heavy, flavourful and with a proper crust — but it is the sweet things that have made the bakery internationally famous: the cardamom croissant that caramelises like a kouign amann, the twice-baked drømmekage, and the seasonally changing cakes. Open daily.
